Aloo Gobi/ Potato Cauliflower Curry




Ingredients

Cauliflowers florets-3 cups
Large Potatoes- 3
Green chilies-3
Cumin seeds- 1.5 tbsp
Chopped garlic- 1tbsp(optional)
Chopped ginger-1 tsp
Salt to taste
Chopped coriander leaves- 2 tbsp
Garam masala- 1/4th tsp
Turmeric- 1/4tsp
Oil- 4 tbsp

Preparation

  • Boil potatoes and cut them into cubes and set aside. 
  • Cut the cauliflower florets into bite size pieces and immerse in a warm water with  1tbsp salt and a pinch of turmeric, set aside for 10 minutes.
  • Heat oil in a saucepan, add cumin seeds allow it to crackle. Add turmeric powder, ginger, garlic and slit green chilies cook for few minutes until the raw smell of garlic goes off.
  • Drain water from the cauliflower florets and add them to the pan and cook until they or soft yet firm enough to bite. 
  • Add the boiled and cubed potatoes to the above and mix well.
  • Add salt, garam masala mix well and check for taste if desired add more spice powder. switch of the flame and garnish with coriander leaves.
