Quick Baby Corn Pulao




Ingredients

Babycorn- 1.5 cups (sliced lengthwise)
Basmathi rice-1.5 cups
Water - 1.5 cups of water per cup of rice
Tomato 2 chopped
Onion-2 chopped
Green chilies-2 slit
Kashmiri chilli powder- 1/2 tbsp
Garam masala- 1tbsp
Cumin powder-1/4th tsp
Coriander powder-1/4th tsp
Fennel powder-1/2 tsp
Cinnamon-1 inch stick
Cloves-3
Star anise-1
Cardamom-2
Lemon juice- 2 tbsp
Oil- 5 tbsp
Salt- to taste


Preparation
  • Wash  and soak rice for 15 minutes.Drain water.Sprinkle lemon juice on it.
  • In a pressure cooker heat oil, add cinnamon, clove, cardamom star anise and saute for few minutes until you get aroma of the spices. Add slit green chilies ,onion and saute for 3-4 minutes, add tomatoes and cook until tomatoes turns soft.
  • Now add sliced baby corn, all the spice powders and saute for 5 minutes.
  • Add the soaked and drained basmati rice, required amount of water and salt .Cook for3 whistles. Serve hot with raita
