Bhindi fry/ Okra fry




Ingredients

Bhindi/ Okra -1/2 kg
Onion-2 sliced
Tomato- 2 medium finely chopped
Sesame seeds-1 tbsp(optional)
Chili powder-1/2 tsp
Coriander powder-1/4th tsp
Gram Masala-1 tsp
Amchur powder/ dry mango powder-1/2 tsp
Salt- to taste
Turmeric powder-1/2 tsp
Cooking oil- 4 tbsp
Water-2 tbsp

Preparation


  • Wash and dry the okra. Remove the head and tail part and cut them into 1 inch pieces.
  • Heat 3 tbsp of oil in a pan and fry okra on medium flame. 
  • Place the cooked okra in a plate. Meanwhile in same pan heat 1 tbsp of oil,  add sliced onions and saute until golden brown. Add chopped tomatoes and cook until very soft. You should be able to mash tomato from back of the spoon. 
  • Add all the spice powder and give good mix. Add 2 tbsp water and cook on low flame for 1-2 minutes. 
  • Add fried okra and  salt  mix thoroughly. Switch of the flame, serve hot with rotis.
