Masala Upma/ Vangibath Uppittu







Ingredients

Upma Rava/ cream of wheat-1 cup
Onion -1 chopped
Tomato-2 medium chopped
Mixed vegetables( French beans, peas, carrot)-1 cup chopped and boiled
Salt -to taste
Mustard seeds- 1 tsp
Curry leaves-5-10
Urad dal- 1 tsp(optional)
Channa dal -1 tsp (optional)
Vangibath powder( MTR)-1 1/2 to 2 tsp
Oil or ghee( clarified butter)- 3 tbsp
Turmeric powder-1/2 tsp
Water-2 1/2 cups

Preparation


  • Heat wok and fry upma rava on medium flame until the rava turns light golden brown in color.
  • Keep aside the roasted rava.
  • In the same pan heat oil add mustard seeds allow it to splutter. 
  • Add curry leaves, turmeric powder, channa dal and urad dal .  Saute onions until translucent add tomatoes. Cook until soft.
  • Add boiled veggies and mix well. 
  • Add water and vangibath powder and salt and bring water to boil. Reduce the flame and add the roasted rava slowly and mix well. Cook under medium flame until the rava absorbs all the water. 
  • Close the wok with a lid and cook under low flame for 4-5 minutess. Serve hot with coconut chutney on the side.
