Palak Paneer Fried Rice/ Spinach Fried Rice






Ingredients

Basmati Rice-1 cup
Onion-1 sliced
Red capscium- 1/2 cup sliced
Double beans-1/2 cup (optional)
American Sweet corn-1/2 cup
Peas-1/2 cup
Paneer cubed- 100 gms
Green chilies- 3
Coconut- 3 tbsp
Blanched spinach-2 cups
Cloves-2
Cinnamon-2 pieces
Bay leaves-1
Garam Masala-1 tsp
Chili powder-1 tsp
Salt to taste
Oil- 4  tbsps
Cumin seeds- 1 tsp
Turmeric- 1 tsp

Preparation

  • Pressure cook Basmati rice.
  • Grind blanched spinach along with coconut, cloves and 1 piece of cinnamon.
  • Heat oil in a pan , add cumin seeds allow it to splutter. Add sliced onions fry till golden brown add turmeric powder and bell pepper saute for 2 mins.
  • Add cooked peas, double beans and sweetcorn. Give a good mix and cook on medium flame for 5 minutes.
  • Add Spinach puree cook for 5 minutes .
  • Add paneer cubes garam masala and chili powder.
  • Finally add the cooled Basmati rice and mix well . Serve hot with raita
