Sprouts and Cauliflower Pulav / Gobi Pulav



Ingredients

To grind

Coconut-1/2 cup
Coriander leaves- Handful
Mint leaves-Handful
Cinnamon stick 2
Clove-2
Star anise- 1
Onion -1/2 cup
Ginger-small piece
Chilies- 6
Garlic-9-10 cloves

Grind the above ingredients in to a smooth paste

For pulav

Green gram (mung bean) sprouts-2 cups
Cauliflower florets- 1 medium cut into bite size pieces
Onion -1 chopped
Tomato-2 chopped
Cardamom-4
Bay leaf-1
Turmeric powder-1/2 tsp
Cooking oil-2 tbsp
Ghee-2 tbsp
Mint leaves-1 cup
Chili powder- 1/2 tsp
Lemon juice 2 tbsp
Rice-1.5 cups
Water (1.5 cups water for every cup of rice)

Preparation
  • Heat oil  and ghee in a pressure cooker,  add cardamom, bay leaf and saute until aroma of spices are released.
  • Add onion fry until golden brown.
  • Add Tomatoes saute till they are soft. To this pour in the ground paste, mint leaves, sprouts and cauliflower. Cook on a low flame for 2-3 minutes.
  • Mix in salt and chili powder. Finally add rice, lemon juice,water and pressure cook for 3 whistles.
