Mango Cheesecake (no-bake and eggless)




Ingredients

For crust

Britannia  Digestive Biscuit- 2 cups
Butter-1/2 cup
Drinking Chocolate powder-2 tbsp


For Filling

Icing sugar - 1cup
Grated paneer-2 cups
Whipping cream-1 cup
Yogurt thick( Curd) -1/4 cup
Agar Agar( China grass)-20 grams
Sweetened Mango puree -2 1/2 cups
Cardamom  powder--1 tsp


 For Glaze

Mango Puree-1/2 cup
Water-2 tbsp
Sugar-2 tbsp
Lime juice-1 tbsp

Preparation

Crush biscuits to a coarse powder and put it into a bowl. Add butter and mix. Put this mixture at the base of a spring form pan (8 inch pan).

Press the mixture lightly and place it in the refrigerator for 1 hour to set.

Prepare agar  as per package instruction. warm up the mango puree and melt the agar agar in it. It should be a uniform mixture.Allow it to come to room temperature

Beat the whipping cream until it forms soft peaks.

Mix paneer ( cottage cheese) and yogurt well without any lumps. Add whipping cream, cardamom powder and mango- agar agar mixture. Blend everything well with a spatula or a wire whisk.

Pour this mixture over the prepared crust and give a gentle tap. Chill this for 3-4 hours in the fridge.

Prepare the glaze by boiling the all the ingredients ( for glaze) boil it until it thickens and cool it.

Spread this evenly over the chilled cake and put it in the fridge for  90 minutes.

Remove from the pan and serve it.
