Maida (All purpose flour)-1 1/2cups
Rice flour-1/2 cup
Semolina(Rava)-2tbsp
Powdered roasted groundnuts-1/2cup
Water-1/4cup
Sesame seeds -4tsp
Oil-1/3 cup
Melted butter-4 Tbsp
Onion(finely chopped)-1big
Baking soda-1tsp
Green chillies (finely chopped)-3
Red chilli powder-1/2tsp or to taste
chopped coriander leaves-1/2cup
Chopped curry leaves-1/2cup
Sugar-1tsp
poppy seeds- 2tbsp (optional)
Salt-to taste
Preparation
- Take a bowl, and mix all the above ingredients to form a soft dough.
- Cover the dough with a wet muslin cloth and let it rest for 30 minutes
- Pre-heat the oven at 350 F.
- Divide the dough into small balls and flatten them in between your palms or you could roll them using rolling pin and cut them in to desired shape using a cookie cutter.
- Prick on the discs with a fork before baking them.
- Bake the nipattu for 7-8 min on one side, flip them and bake on the other side for 8-10 minutes or until crisp. Cool them and store in airtight container.
