Ingredients
3 1/2 cups all purpose flour + extra

For the Masala
3/4th cup of coriander leaves,finely
chopped
1 big onion,very finely chopped
1 tbsp green chilli paste or finely chopped
1 /2 tsp cumin seeds

Preparation
- Warm up milk and water mixture until it is luke warm to touch.Pour this into a wide bottomed bowl.
- Dissolve in the sugar and yeast in it and mix thoroughly until dissolved.Leave this aside for 15-20 mins until the yeast mixture becomes frothy.
- Meanwhile heat olive oil or regular oil in a pan and crackle cumin and fennel seeds over low flame and add very finely chopped onion and fry until it is translucent,add a pinch of salt.Add coarsely ground chill paste,chopped coriender and mix well and stir fry for a minute..
- To the yeast mixture and olive oil and salt, slowly add this mixture to the flour and mix thoroughly to form a lump.
- Take the above dough and knead for 10 mins, if dough turns out sticky you can add extra flour and grease your hands with oil and knead.
- Flatten the dough with your hands and lay the prepared masala in the center and fold knead the dough well for 12-15 mins until the mixture is evenly incorporated in the dough, if the dough becomes sticky use extra dough to knead.
- Cover this with clean cloth and allow it rise (dough should double in its volume). Keep the dough in warm place. Depending on the climatic conditions the time required for the dough to rise may range from 1-1.30 hours. You could just heat microwave or oven for few mins and keep the dough in there for quick rise.
- You can use the entire dough to make bread or divide it to make bread and bun depending on the size of your bread pan. I baked 3 buns and 1 loaf of bread.
- Knead the dough well for 10-12 mins. Take the one portion of the shaped dough and keep in the greased loaf pan. Shape remaining dough into buns and place them in greased baking tray.
- Keep this dough in warm place and allow to rise again (double). Approximately this takes around 1 hour. Brush the dough with milk and sprinkle the black sesame seeds.
- Preheat the oven to 180 degree for 10-15 mins , place the bread loaf and bake for 18-20 mins (until the top portion of the bread turn slight ). It would be good to keep water in the glass below the baking loaf for 5-10 mins and remove it later (this helps to make soft bread).
- Bake the buns and bread separately as buns get baked pretty quickly close to 10 mins. Keep an eye while baking to avoid over baking.
- Once out of the oven brush the buns and bread with soft butter(room temperature), This makes the crust softer. Don’t panic if the crust looks harder when out of oven, it will become soft when allowed to cool for 5-10 mins, don’t forget the butter.
- Remove the bread from the loaf pan, by running the knife around the loaf.
