Ingredients
Red curry paste- 2-3tbs
Cooked basmati rice-2.5 cups
Chopped carrot- 1/4th
Onion- 1 small onion(sliced)
Peas-1/4th cup
Cubed pineapple- 3/4th cup
Chopped capsicum (Bell pepper)-2 tbs
Roasted cashew-nuts- 1/4th cup
Cooking oil- 2 tbs
Turmeric- A pinch
Chopped coriander leaves(Cilantro)-1-2 tbs
Salt-as per taste
Preparation
- Heat oil in a large heavy bottomed pan, add onion,turmeric to it and saute until transparent.Then add carrot, peas, and capsicum cook them well.
- Now add the the cubed pineapple and cook for few minutes. Add the red curry paste and mix well with cooked veggies and add salt.
- Add cooked Basmati rice to the cooked veggies and mix well. Garnish with roasted cashew-nuts and coriander leaves. Tastes best when served hot.
