Spinach Pulao/Palak Pulao






Ingredients

Basmati rice- 1 1/2 cups
Water-1 3/4th cups
Onion- 2 (chopped)
Tomatoes - 2 chopped
Chopped spinach-2-3 cups
Mint leaves- 1 cup
Cinnamon stick- 2 inches
Star anise-2
Cloves-3
Bay leaf-1 
Dagad Phool (Pathar Phool) or Black Stone Flower-1 
Garam masala- 2tsp
Salt as per taste
Chili powder-1/2 tsp
Oil- 2 tbs
Clarified butter(ghee) 2 tbs
Cumin seeds- 1 tbs
Turmeric- 1/2tsp
Chopped carrot - 1/2 cup
peas- 1 cup




Preparation

  • Take a pressure cooker heat oil, ghee add cumin, turmeric, whole garam masala ( Bay leaf, cinnamon stick, cloves, star anise and dagad phool) and chopped onion stir fry for 5 minutes. 
  • Add chopped tomatoes and cook until soft. Now add chopped spinach and mint leaves fry for 1 min.
  • Mean while wash the rice and keep aside.  
  • In goes the carrot, peas,salt, chili powder and garam masala. 
  • Cook veggies for 3 mins and add the water required to cook rice. Add the rice once the water starts to boil and mix well. Close the pressure cooker lid and allow the contents to cook.
  • Switch off the flame when you hear 3 cooker whistles.
  • Enjoy the fragrant spinach pulao with raita.
