Eggless Fruit and Nut Cake (christmas cake)


Ingredients

Water – 1 1/2 cup
Orange juice - 1/2 cup
Mixed dry fruits (Raisins,Cherry,Prunes) – 1/2 cup
Butter – 1 stick (1/2 cup)
Vanilla Extract – 1 tsp
All-Purpose Flour (Maida) – 1 3/4 cup
Sugar – 1 cup
Baking Soda – 1 tsp
Salt – 1/2 tsp
Cocoa powder-1/2 tsp
Cinnamon Powder – 1/2 tsp
Nutmeg Powder – 1/2 tsp
Clove powder-1/2 tsp
Mixed nuts(Cashews, Almonds,Walnuts)-3/4th cup
Tutti frutti – 1/2 cup

Preparation

  • In a small sauce pan, add water and Orange juice, dry fruits (Raisins,Cherry,prunes) . Cover the pan with a lid and cook on medium heat for 10 minutes.
  • Pour the above mixture into a large mixing bowl.
  • Add Butter and mix until melted. Allow mixture to cool for about 10 minutes.Add Vanilla Extract
  • In a separate bowl, combine All-purpose Flour, Sugar, Salt, Baking Soda, Tutti frutti, Cinnamon, Clove,Cocoa and Nutmeg Powder.
  • Slowly incorporate (fold in) the dry ingredients into the wet ingredients, now add the nuts(Cashew, almonds,walnuts) and mix.
  • Preheat the oven at 350F for 10 mins, grease and line the baking pan with butter paper/Parchment paper. Pour the cake batter, give a tap to level the cake batter. I have used 7 inch baking pan.
  • Bake for 35 – 40 minutes until inserted knife at the center of the cake comes out clean.
  • Allow cake to cool in the pan for 30 minutes and then transfer the cake on to the cooling rack to cool further.
