Hara bhara idli
Ingredients

Idli - 4
Spinach(Palak)- 4 cups
Coriander leaves-  1/4th cup
Green chilies- 3-4
Chopped capsicum (Bell pepper)- 1/4th cup
Chopped spring onion (chives)-2 tbs
Sliced tomato- to garnish
Oil- 1 tbs
Salt -as per taste


. Preparation

  • Cut the idlis into bite size pieces, toast them on the hot griddle with little oil. Idlis should turn light brown in color
  • Blanch spinach and puree it along with green chilies and coriander leaves.
  • Take a pan, heat oil, add chopped capsicum cook for few minutes.
  • Pour in the pureed spinach, salt and cook for  2-3 minutes.
  • Toss the toasted idlis, chopped chives into the gravy and mix well. Garnish with sliced tomato.Serve hot.
