Ingredients2 tortillas made of wheat flour or All purpose flour
Sweet corn (boiled)- 1/2 cup
Capsicum-1/4th cup
Grated Carrot- 1/2 cup
Cumin powder-1/4th tsp
Salt to taste
Pepper powder to taste
Mixed herbs (optional)- a pinch
Mozzarella and Cheddar cheese- 1/2 cup cheese
Oil-2 tsp or Butter
Preparation
- Heat a small pan add oil, capsicum, sweet corn and carrot saute for 1-3 mins on a medium flame until all the veggies are cooked well, now add salt pepper, herbs and cumin powder. Mix well and switch of the flame.
- Place one tortilla on the hot griddle, drizzle half on the oil and cook for for few seconds and flip over spread the vegetable filling and cheese on tortilla. Warm-up the second tortilla, place it above the first one, spread little oil and flip over. Take care not to spill the vegetable filling.
- Cook until tortilla becomes little hard and cheese melts, which usually takes 1-2 min.
- Cut in to 4 pieces and serve with sour cream or guacamole.
